White Bean Soup

Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Sauté until vegetables are softened, about 5 minutes.
Stir in the white beans, thyme, rosemary, and bay leaf. Cook for 2 minutes.
Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.
Remove bay leaf and use a wooden spoon to mash some of the beans against the side of the pot for a creamier texture.
Add chopped spinach or kale, if using, and cook for 2-3 minutes until wilted.
Season with salt, pepper, and lemon juice. Taste and adjust seasoning as needed.
Serve hot, garnished with fresh parsley.
