Tocilog
Tocilog is a popular Filipino breakfast consisting of sweet cured pork (tocino), garlic fried rice (sinangag), and fried egg (itlog). It's a hearty, flavorful meal often enjoyed in the morning.

In a bowl, combine sugar, soy sauce, pineapple juice, vinegar, garlic (for marinade), salt, pepper, and annatto powder. Mix until sugar dissolves.
Add sliced pork to the marinade, ensuring all pieces are coated. Cover and refrigerate for at least 4 hours or overnight.
Heat 2 tablespoons cooking oil in a skillet over medium heat. Add marinated pork and cook until browned and caramelized, about 6-8 minutes per side. Set aside.
For garlic fried rice, heat 2 tablespoons oil in a large pan over medium heat. Add minced garlic and sauté until golden brown.
Add cooked rice to the pan, breaking up clumps. Toss and fry until rice is heated through and evenly coated with garlic. Season with salt and pepper to taste.
In another pan, fry eggs sunny-side up or as desired. Season lightly with salt and pepper.
To serve, plate garlic fried rice, place cooked tocino on the side, and top with a fried egg. Enjoy hot.
