Heat vegetable oil in a large pot or deep skillet over medium-high heat.

Add sliced beef and cook until browned and just cooked through, about 2-3 minutes.

Remove beef and set aside. In the same pot, add onions and garlic, sauté until fragrant and translucent.

Stir in carrots and cook for another 2 minutes.

Pour in beef or chicken broth, soy sauce, mirin, sake (if using), and sugar. Bring to a gentle boil.

Add the cooked udon noodles to the broth and simmer for 2 minutes.
