Udon Noodles and Beef
A comforting Japanese-inspired dish featuring tender beef slices, chewy udon noodles, and sautéed vegetables in a flavorful soy-based broth.

Prepare udon noodles according to package instructions, drain, and set aside.
Heat vegetable oil in a large pot or deep skillet over medium-high heat.
Add sliced beef and cook until browned and just cooked through, about 2-3 minutes.
Remove beef and set aside. In the same pot, add onions and garlic, sauté until fragrant and translucent.
Stir in carrots and cook for another 2 minutes.
Pour in beef or chicken broth, soy sauce, mirin, sake (if using), and sugar. Bring to a gentle boil.
Add the cooked udon noodles to the broth and simmer for 2 minutes.
Return the beef to the pot along with baby spinach. Stir until spinach is wilted.
Season with salt and pepper to taste.
Serve hot, garnished with green onions and sesame seeds if desired.
