In a large bowl, combine sugar, soy sauce, pineapple juice, garlic, salt, ground black pepper, rice vinegar, and red food coloring (if using). Mix well to form the marinade.
Add the pork slices to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 8 hours or overnight.
Heat a non-stick skillet over medium heat. Add the marinated pork slices (including some marinade) and cook for 10-12 minutes, turning occasionally, until the pork is cooked through, caramelized, and slightly sticky.
Serve hot with garlic fried rice and a fried egg, if desired.
