In a large mixing bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until foamy.
Add flour, kosher salt, and 1/4 cup olive oil to the yeast mixture. Mix until a rough dough forms.
Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
Place the dough in a lightly oiled bowl, cover, and let rise in a warm place for 1 hour, until doubled in size.
Grease a baking sheet or pan with olive oil. Stretch the dough out into an even layer, about 1/2 inch thick.
Cover and let rise for another 20 minutes.
Preheat the oven to 425°F (220°C). Use your fingers to dimple the top of the dough, drizzle with olive oil, and sprinkle with rosemary and coarse sea salt.
Bake for 20-25 minutes, until golden brown and crisp.
Cool slightly before slicing and serving.
