Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Rinse the brown rice and add it to a medium saucepan with 2 1/2 cups water. Bring to a boil, then reduce heat, cover, and simmer for 30-35 minutes until tender.
While rice cooks, place salmon fillets on the prepared baking sheet. Drizzle with olive oil, season with salt, pepper, minced garlic, and dill. Top with lemon slices.
Bake salmon in the oven for 12-15 minutes, until cooked through and flaky.
Steam broccoli florets in a steamer basket over boiling water for 5-6 minutes, until crisp-tender.
Serve each salmon fillet with a side of brown rice and steamed broccoli. Garnish with extra lemon if desired.
